Walkin’ and Talkin’ Turnip Greens

·       4 lbs fresh turnip greens (your choice of greens) about 6-8 bunches, trimmed and washed

·       1 1/2 lbs smoked turkey tails, legs, necks, or a large smoked turkey leg. Make sure the parts are meaty.

·       4-6 chicken legs or thighs. Make sure that the skin is on and bone in.

 

·       4 tbsp oil

·       1 32 oz carton Chicken Stock such as Swanson

·       6-8 cups water (enough to cover the greens in the pot)

·       1 tbsp Oh My Soul! All-Purpose Seasoning

·       1 tbsp seasoned salt such as Lawry's

·       1 tbsp garlic powder

·       1 tsp Nature’s Seasoning

·       1 tsp crushed red pepper flakes you can go down on this to 1/2 teaspoon if you prefer less heat.

·       ½ tsp black pepper

·       1 small rough chopped onion

·       1 whole turnip (optional for an elevated turnip-y taste)

Instructions:

Once you have trimmed and washed your greens and rinsed your meats, you are ready to start your base that will become your potlikker.

Add chicken stock and water to a large pot to fully submerge the turkey and chicken meats. Bring to a boil at medium-high heat, then reduce the heat to low, cover and cook at a low simmer until the meat is nearly tender (approximately 1 hour or 30-35 minutes in an InstaPot).

Once the meat is almost tender, add greens, and additional cups of water (if needed) or enough to just barely cover greens.

Bring the heat back up to a boil then reduce heat to about medium or medium-low and cook covered for at least 2 hours (45 minutes in InstaPot) or until completely tender and liquid has cooked down. Taste the potlikker and see if it requires more seasoning to suit your taste. Walkin’ and Talkin’ I’m telling you.
